We start with the familiar and look for the bit that could be extraordinary. Sometimes it’s an unexpected pairing. Sometimes it’s a small detail taken rather further than strictly necessary. And sometimes it’s a complete obsession with getting one thing exactly right.

It started with a fairly simple question: how soft can a pastry actually be? Apparently the answer required rather more dough, filling, testing and unreasonable levels of persistence than anticipated.
