I DECIDED THE WORLD NEEDED ANOTHER PASTRY.

Because clearly there weren’t enough already.

It started with a fairly simple question: how soft can a pastry actually be? Apparently the answer required rather more dough, filling, testing and unreasonable levels of persistence than anticipated.
